Biryani


A phalanx of carbohydrates armed with the sarissa of protein. Flavourful and fragrant, the biryani shows how conquest can turn into culture and trade into taste. The biryani traces its origin to the Persian word birian, "fried before cooking". The dish is supposed to have come through two routes: Overland with the marauding Turks and Mughals and via trade from across the high seas to Kerala. Today, almost all regions in India have their own spin on this dish: That's how India adopts and adapts its favorite things.
